How I Refused to Separate Stones from Rice and What I Later Discovered

I hated it as soon as I saw it!

Picking beans was a boring task for me so I never liked to do it.......now you want me to "separate stones from rice?'

No way!

That was my response when I was asked to come sort out this Nigerian brown rice we call Ofada rice.

Whether you like the local rice or the Ofada rice; or you prefer the one looking more appealing to the eye, do well to read to the end!

In this post I have compiled 3 main differences between Brown rice and White rice.

GLYCEMIC INDEX

The effect a specific amount of food has on the blood sugar level is the Glycemic Index of that food.

Glycemic Index ranges from 1-100.

Low Glycemic Index: 1–55
Medium Glycemic Index : 56–69
High Glycemic Index: 70–above

Brown rice has a Glycemic Index of 50. This means it has little or no effect on your blood sugar level. White rice has a higher glycemic index of about 72.

Don't fret yet!

From various research by experts, soaking and rinsing rice before cooking and some other pre-cooking methods can reduce the Glycemic Index of that rice.

NUTRITIONAL CONTENT

Both Brown and White rice are rich in carbohydrates, but the Brown rice is enriched with more fiber, vitamins and minerals compared to the white rice.

Due to processes involved during production, the white rice has lost some of it's important nutrients.

TASTE AND TEXTURE

Brown rice is more nutty and takes longer time to cook, unlike the soft White rice that gets done in just few minutes.

To end it all, preference given to the type of rice consumed is based on some other important factors.

Finance, health considerations and personal preference are the most influential of these factors.

As much as you’ll like to save cost, it is very important you take precautions and get knowledge about some of these important things before you take a decision.

Our Local Rice is not all bad after all. The packaging only needs to be improved and that will make it look better.
